Creamy Chocolate Chia Puddings (GF, Vegan)

As promised last week here comes this creamy chocolate chia pudding recipe. They are delicious enough to be served as a desert and healthy enough to be for breakfast. I love having one for breakfast and one for sweets after dinner hehe.

Chia puddings are very high in fibre, plant protein and Omega 3s and are one of my favourite healthy breakfasts. I like them on their own topped with fruit or blended in a smoothie or recipe like this one below. 

I will be making them for breakfast during the Easter long weekend. Enjoy and have a lovely Easter. 



Creamy Chocolate Chia Puddings

Recipe makes 4. Time: 5 minutes + chilling time in the fridge

Ingredients:
  •      2 cups of almond milk;
  • ½ cup of chia seeds;
  • ¼ cup of peanut butter, almond butter, hazelnut butter or tahini;
  • 1/3 cup of raw cacao powder;
  •  1/3 cup of maple syrup or rice malt syrup;
  •  ½ tsp of vanilla paste;
  •  Cacao nibs, almonds and hazelnut cacao butter for toppings

Instructions:
  1. In a blender mix all the ingredients until creamy.
  2. Pour into 4 glasses or bowls;
  3. Top with cacao nibs, nuts and nut butter. Leave to set in the fridge for 20 minutes and enjoy cold for breakfast or dessert.
