Chocolate Tahini Coconut Slice - Raw Vegan

Sorry for the delay in sharing this recipe with you all! I have made it 3 times since. It is sooo good you must make it! I would say it is one of the best recipe I have ever made and I am happy to share it with you to finish the year of 2015.

Lots of good things planned in my life for 2016. I am excited for 2016 and what it might bring - and even more so because I am now a happy mother of twins.


So without further ado this is my chocolate tahini coconut slice recipe- a refined sugar free, vegan, gluten free, dairy and date free recipe!

Coconut Chocolate Tahini Slice 

Ingredients:

Base:
  • 2 cups of raw cashews
  • 2 cups of shredded coconut
  • 1/2 cup of raw cacao
  • 1/2 cup of maple syrup
  • 1/2 tsp of sea salt
  • 1/3 cup of tahini
  • 1 tsp of vanilla paste
Coconut Chocolate Butter:
  • 1/2 cup of maple syrup
  • 1/4 of coconut oil
  • 1/2 cup of cacao
  • 1 tbsp of tahini 
Toppings:
  • Coconut chips
  • Cacao nibs
Instructions:
  1. Line a cake tin with glad wrap;
  2. Mix in a food processor all the ingredients for the base for a few minutes;
  3. Press the base in the tin using your hands or a spoon firmly to create a strong base.
  4. Place the base in the freezer to cool down while you make the choc coconut butter.
  5. Mix in a bowl the coconut chocolate butter ingredients with a fork to mix the tahini well.
  6. Pour on top of the base once taken out of the freezer and add the toppings.
  7. Leave to set in the freezer for an hour.
  8. Take out 20-30 min before serving. 
  9. Can stay in the fridge for up to a week.
