Banana Coconut Loaf / Friday Night Baking Session GF SF Paleo



Last Friday night I decided to whip up Lorna Jane banana and chia seeds loaf. I adjusted the recipe a little bit. It was really good. The texture of the loaf was a little bit too crumbly though due to the coconut flour. 

It was my first time baking with coconut flour so I think I will need to do a little bit more research next time. But the loaf was really good, sweet and so healthy! 



Recipe for my banana coconut loaf:

(inspired from Lorna Jane's recipe)

1 ripe banana
1/3 cup coconut oil
1 tbsp maple syrup
3/4 cup coconut flour
1/2 cup protein powder (Sunwarrior - natural)
2 tsp cinnamon
juice of 1 orange
1 tsp baking powder
1/2 tsp bicarb soda
3 eggs
1 cup rice milk
1 tbp pumpkin seeds
chia seeds for toppings

preheat oven at 180.

1. mix dry ingredients
2. mash banana with milk and oil
3. add maple syrup and orange juice
4. mix well
5. grease loaf tin and pour batter.
6. sprinkle with nuts and chia seeds
7. add a drizzle of maple syrup (optional)
8. cook at 180 for 25-30 min.
