Rainy Day Chai Cake


Today when coming home from work I really felt like baking. I love baking on a cold rainy day. And this cake was perfect for a quick afternoon rainy baking session. 

I have been enjoying drinking Chai tea lately at work. If you have not tried it yet I highly recommend it. I like it dark or as a latte with almond milk. 

Ingredients:
  • 1 1/2 cup almond milk;
  • 1 cup of brewed chai tea;
  • 3 cups buckwheat flour;
  • 2 tbsp apple cider vinegar;
  • 1 tbsp baking powder;
  • 1 tsp vanilla powder;
  • 2 tsp cinnamon;
  • 1 tsp cardamon;
  • 1/2 tsp nutmeg;
  • 1 cup coconut sugar ( rapadura sugar or raw sugar);
  • pinch of salt;


 
 Instructions:

  1. Pre heat oven at 200 degrees;
  2. Line a cake tine with baking paper;
  3. Mix the almond milk and the apple cider vinegar in a bowl and let to set for a few minutes;
  4. Brew a cup of chai tea and leave it on the side;
  5. Add in the flour, baking powder and sugar;
  6. Add in the spices and vanilla;
  7. Add in the brewed chai tea;
  8. Mix well and place in the cake tin and in the oven for 30-40 min;
