During the long weekend I felt like baking (which ended up being a silly idea as it was around 40 degrees outside and using the oven made me melt!).
I invented on the spot these chewy Vegan Berry Oats Cookies. (The recipe worked well to make them chewy and delicious but if you are after crispy cookies you should have a look at this recipe! )
These chewy Berry Oats Cookies are very healthy and can even be enjoyed for breakfast!
I added Pana Chocolate choc chips in mine and I highly recommend adding choc chips if feeling like a treat!
Vegan Berry & Oats Cookies
Makes 12- time: 15 min
Ingredients:
- 1/2 cup of steel cut oats;
- 1/2 cup almond meal;
- 1 tbsp sunflower seeds;
- 1 tbsp pumpkin seeds;
- 1 tsp cinnamon powder;
- 1 tsp baking powder;
- 3 tbsp maple syrup;
- 2 tbsp melted coconut oil;
- 1 handful of almonds;
- 1 tbsp chia seeds;
- pinch of salt;
- 1/2 cup frozen berries (raspberries or blueberries- I used a mix)
- Optional chocolate chips;
Instructions:
- Preheat oven to 220 degrees and line an oven tray with baking paper;
- Mix in a bowl the oats, almond meal, salt, baking powder, seeds, chia seeds and almonds;
- Add in the coconut oil, maple syrup;
- Mix all the ingredients well;
- Add in frozen berries (& choc chips) and mix it slowly to not mash the berries;
- Using a small handful shape cookies on the oven tray; ( this can be tricky so take your time and press them down a little to make them stick and shape properly)
- Cook in the oven for 10 -15 min at 200 degrees.
- Enjoy warm or cold
