Today when coming home from work I really felt like baking. I love baking on a cold rainy day. And this cake was perfect for a quick afternoon rainy baking session.
I have been enjoying drinking Chai tea lately at work. If you have not tried it yet I highly recommend it. I like it dark or as a latte with almond milk.
Ingredients:
- 1 1/2 cup almond milk;
- 1 cup of brewed chai tea;
- 3 cups buckwheat flour;
- 2 tbsp apple cider vinegar;
- 1 tbsp baking powder;
- 1 tsp vanilla powder;
- 2 tsp cinnamon;
- 1 tsp cardamon;
- 1/2 tsp nutmeg;
- 1 cup coconut sugar ( rapadura sugar or raw sugar);
- pinch of salt;
Instructions:
- Pre heat oven at 200 degrees;
- Line a cake tine with baking paper;
- Mix the almond milk and the apple cider vinegar in a bowl and let to set for a few minutes;
- Brew a cup of chai tea and leave it on the side;
- Add in the flour, baking powder and sugar;
- Add in the spices and vanilla;
- Add in the brewed chai tea;
- Mix well and place in the cake tin and in the oven for 30-40 min;
