Buckwheat Banana Bread

This recipe is made with coconut and buckwheat flour so it is gluten free, paleo and also vegan as I have not used any eggs but chia seeds instead.
Recipe:
- 3 bananas
- 1/2 cup coconut flour
- 3/4 cup buckwheat flour
- 1/4 cup chia seeds soaked in 1/2 cup of water
- 1/3 cup of coconut oil
- 1/2 cup of maple syrup or honey or rice malt syrup
- 1 tsp of cinnamon
- 1 tsp of vanilla paste
- 2 tsp of baking powder
- almonds and seeds to top the banana bread (optional)
1. Pre-heat the oven at 180 degrees;
2. Grease or line with a baking paper a bread tin;
3. Mash the bananas with a fork or in a blender;
4. Soak the chia seeds in water stirring well;
5. Add the flours and chia seeds to the bananas;
6. Add in the maple syrup and coconut oil (reheated on the stove if need be) along with the baking powder, cinnamon, vanilla and a pinch of salt;
7. Mix well and pour cake batter in the loaf tin;
8. Top with your favourite seeds and nuts;
9. Cook at 180 degrees for 30-40 min;
