Quinoa Ratatouille
Quinoa Ratatouille is a recipe that combines both my French roots and my love of healthy cooking. Ratatouille is a famous french dish ( you probably have seen the cartoon Ratatouille!) from the south of France full of vegetables and flavours. It is usually eaten as a side dish along grilled meats at a BBQ. My mom would make it very often in summer for dinner. I used my mom's recipe and just combined it with quinoa for a meal that is vegan, nutritious and delicious. It can also be served with meat or fish.

Quinoa Ratatouille ( serves 4)
Ingredients:
- 1 cup of quinoa;
- 1 eggplant;
- 1 brown onion;
- 4 cloves of garlic;
- olive oil;
- 1 red capsicum;
- 3 fresh tomatoes;
- 1 zuchinni;
- salt & pepper;
- Oregano;
- Thyme;
- parsley
- Dried italian herbs
Instructions:
Quinoa:
- Rinse 1 cup of quinoa;
- Put 1 cup of quinoa and 1 cup of water in a pan on medium heat with the lid until it boils;
- Then put it on low heat with the lid for 12 min stirring through every few minutes;
- Take of from the heat when done;
Ratatouille:
- Chop the onion and the garlic;
- Put in a pan with some olive oil;
- Cook until clear; then add the chopped up eggplant and put a lid on;
- Add the capsicum and stir through;
- Add the tomatoes and stir through;
- Add the zucchini and stir through;
- Add in your fresh and dried herbs and season with salt and pepper; (optional to add a bit of chili)
- Leave to cook for 15- 20 min on low heat covered with a lid until all the vegetables are nice and tender;
- Serve on top of the quinoa and enjoy!
