Raw Salted Caramel Cookies
As per my previous recipe posted on the blog I got busy in the kitchen over the weekend and made some delicious and healthy raw salted caramel. I actually made the salted caramel with this raw cookies recipe in mind. I shared these with my parents who were visiting me from overseas and some friends at work. Love sharing my raw healthy treats (it saves me from eating them all by myself!)
This is a very simple recipe that actually looks more complicated than it is. I think it took me around 20 min to make them. With raw cooking what takes the longest is the cleaning up of the food processor afterwards!
I topped the raw treats with Goji berries but you could also use nuts or a layer of raw chocolate. I might try the latest next time...
Raw Salted Caramel & Cacao Cookies: ( Makes around 28-30)
Ingredients:
- 1/2 cup of salted caramel ( see recipe here)
- 2 cups of raw almonds
- 10 small dates
- 2 tbsp of coconut oil
- 2 tbsp of raw cacao powder
- 2 tbsp of water
- 1/2 tsp of vanilla powder
- pinch of salt
Instructions:
- Mix in a food processor your almonds then add the dates and the cacao;
- Add in the coconut oil and the vanilla;
- Mix until it forms a sticky paste and add a little bit of water at a time until the dough sticks together;
- Make small balls using around 1 teaspoon of dough at a time and make a hole in the centre as if to make a little nest.
- Once you have made all your empty "nests" add in 1/2 tsp of salted caramel paste in the cups.
- Top with Goji berries.
- Leave in the fridge for 1-2 hours to let them set.
- Enjoy! they can keep in the fridge for 1 week.
