Lemon Coconut Smoothie







I was inspired one evening this week after work to try a new smoothie recipe. This week in Perth it really felt like summer was around the corner and it made me want a summery drink/ smoothie.

I think this recipe can be tweaked a bit and use coconut milk or water instead of almond milk but I used what I had at the time. It really was delicious and tasted like a cocktail! 

Ingredients:
  • juice of 1 lemon
  • 200ml unsweetened almond milk ( or coconut, dairy milk)
  • 1/3 cup desiccated coconut
  • 1 banana
  • optional: sweetener/ coconut water

Instructions:
  1. Mix banana, almond milk and coconut 
  2. Add lemon juice and mix again
  3. Top with coconut and zest of lemon
  4. Enjoy :)
