Blueberry Chia Pudding

Yesterday I found blueberries on sale at Coles for $3 a punnet. While I don't usually buy my fruit and veggies at the supermarket anymore I could not resist it and bought 2! I decided to make my new breakfast- chia pudding. I love it as it is paleo & vegan, filling and so easy to make and quick to eat in the morning as it is already made. I think it can be made with any fruit to replace the blueberries in the recipe below and frozen blueberries would work too.

Ingredients:

  • 1 small banana;
  • 1/3 cup fresh or frozen blueberries;
  • 2 tbsp of chia seeds;
  • 1 tbsp of linseed;
  • 1 scoop of Acai Powder (optional);
  • 1/2 cup of almond milk ( or any other milk);



Instructions:
  1. Mix blueberries in a food processor and add each ingredient at a time finishing with the milk. 
  2. Pour into a bowl or jar.
  3. Leave it overnight in the fridge or 1 h at least for the chia seeds to work their magic. 
  4. Top with your favourite toppings.



This breakfast is a winner as it is not only delicious but it has a very high amount of fibre to keep your tummy happy, high in protein to keep you full all morning and it is high in omegas 3. Chia seeds have 8 times more omega 3 than salmon!Chia seeds are also high in antioxidants, vitamin C, calcium and iron!
