Banana Almond Meal Muffins



Lately I have been eating Paleo, apart from the first few days it is a pretty easy diet to adopt. The only thing I had been missing was sweets so I managed to make my usual banana muffin recipe by swapping ingredients around. I have made a few different batches of these muffins since and they got the husband tick of approval! 

I added cacao in half of the batter in this batch to change it up and create chocolate muffins. They are very healthy, filling and paleo. 


Ingredients:

  • 2 eggs;
  • 2 ripe bananas;
  • 1 1/3 almond meal;
  • 3 tbsp coconut flour;
  • 1/2 cup almond milk;
  • 1 1/2 tbsp maple syrup;(or honey/rice malt syrup)
  • 1 tsp baking powder;
  • 1 tsp vanilla extract;
  • 1 tsp cinnamon;
+ 2 tbsp raw cacao powder (optional: to make chocolate banana muffins)


Instructions:

  1. Preheat oven to 200 degrees and line a muffin tin with 6 paper liners;
  2. Mash bananas, mix eggs and milk together;
  3. add almond meal & coconut flour
  4. add cinnamon and vanilla
  5. add almond milk
  6. add maple syrup or any other sweetener
  7. Pour into muffin tin and bake for 25-30 min until knife comes out clean.
  8. (For chocolate banana muffins I added the cacao to the batter after filling half of the muffin tin- you can make them all chocolate or none)
  9. Cool on a cooling rack.
