Strawberry Cooking Session


I have recently discovered a Farmers market near Stirling (opposite IKEA. Look it up here. I have been going for a few weeks now on Sundays and every week I come home with 2 bags full of fresh local vegetables and other goodies (raw juices, eggs, bread, nitrate free bacon, bee pollen, honey and much other produce!).

This week they had huge trays of strawberries on special - 1 for $10 and 2 for $15. I could not resist their smell and bought a tray. Then it hit me that there is only 2 of us at my house and I would have to find a few different ways to use them up!

So below are a few examples on what to do when you have too many strawberries!







Strawberry Coulis
4-5 cups of fresh strawberries
juice of 1 lemon
juice of 1 orange
1 tsp vanilla paste
1 tsp cinnamon 
1 tbsp honey
1 tbsp chia seeds 
(add more for a more Jam-like consistency)

-simmer on low for 20/25 min




Strawberry IceCubes



 I also froze some into Ziplock bags to use in my smoothies later on. 




RAW STRAWBERRY ICE-CREAM


makes 4
3 cups of strawberries
1 banana
1/2 cup raw cashews
1 tsp vanilla paste
1 tsp cinnamon
1 tbsp honey
2 tbsp coconut (optional)

- mix all ingredients in a food processor
- put in freezer for 4h
- defrost for 1-2h in a fridge
or you can eat them as creams if left in fridge for 3-4h




Strawberry Juice




Kale Strawberry Salad
kale
walnuts
strawberries
balsamic vinegar
brown rice / quinoa
