This salad is also perfect to take to BBQs all summer long - not just for Christmas day.
Healthy Kale Christmas Salad
Time: 20 min, serves 4.
Ingredients:
- 1 bunch of kale (better if organic);
- 1/2 cup watermelon diced;
- 1/2 cup feta (or cashew cheese drizzled if vegan);
- 1/4 cup pecans;
- 1/4 cup pumpkin seeds;
- 2 tbsp desiccated coconut;
- 2 tbsp olive oil;
- salt & pepper;
- 2 tsp apple cider vinegar;
Instructions:
- Wash and remove the leaves from the kale stalks.
- Cut the kale leaves finely and massage in a bowl with 2 tbsp olive oil with your fingers to soften.
- Cut and add the diced watermelon, feta (or cashew cheese).
- Next mix in the nuts and seeds and dress with apple cider vinegar, salt and pepper and mix all together.
- Sprinkle over the coconut at the end.
