Healthy Moroccan Quinoa Salad
If looking for some lunch or salad inspiration look no further! I have the perfect nutritious and healthy salad recipe for you! It has the benefits of the ancient grain Quinoa and some amazing Moroccan flavours. This healthy quinoa salad a definite winner amongst my friends and family. Enjoy!
Ingredients:
- 2 cups of quinoa
- 1 carrot
- 1/3 cup almonds
- 1/4 cup dried cranberries
- 6 dried apricots
Dressing:
- juice of 1 lemon;
- 2 tsp of turmeric
- 3 tsp of cumin
- 1 tsp of cayenne pepper
- 1 tsp of coriander seeds;
- handful of coriander leaves;
- 1 tbsp of olive oil;
Instructions:
- Cook the quinoa ( I boil 2 cups of water and add the quinoa and let simmer slowly with a lid on for the quinoa to absorb all the water)
- Let the quinoa to cool down;
- Grate a carrot;
- Chop the nuts, cranberries and apricots;
- Mix together with the quinoa and the dressing.
- Top with a few more chopped nuts and fresh coriander.
