Healthy Moroccan Quinoa Salad






If looking for some lunch or salad inspiration look no further! I have the perfect nutritious and healthy salad recipe for you! It has the benefits of the ancient grain Quinoa and some amazing Moroccan flavours. This healthy quinoa salad a definite winner amongst my friends and family. Enjoy!

Ingredients: 

  • 2 cups of quinoa
  • 1 carrot
  • 1/3 cup almonds
  • 1/4 cup dried cranberries
  • 6 dried apricots
Dressing:
  • juice of 1 lemon;
  • 2 tsp of turmeric
  • 3 tsp of cumin
  • 1 tsp of cayenne pepper
  • 1 tsp of coriander seeds;
  • handful of coriander leaves;
  • 1 tbsp of olive oil;
Instructions:
  1. Cook the quinoa ( I boil 2 cups of water and add the quinoa and let simmer slowly with a lid on for the quinoa to absorb all the water)
  2. Let the quinoa to cool down;
  3. Grate a carrot;
  4. Chop the nuts, cranberries and apricots;
  5. Mix together with the quinoa and the dressing.
  6. Top with a few more chopped nuts and fresh coriander.
